White Beans with Fresh Bay Leaves

Ingredients

  • 1 red onion, halved and thinly sliced
  • 2 Tbsp extra virgin olive oil
  • Hot red pepper to taste
  • 2-3 peeled, chopped tomatoes (can use good-quality canned)
  • 4 fresh bay leaves
  • 1 lb (450 grams) cooked white cannellini beans (canned is ok)

Preparation

Sauté the onion and hot red pepper in the oil until soft. Add the tomatoes and fresh bay leaves, cooking over medium heat for 10 minutes. Drain the beans of excess liquid and add to the pan. Lower the heat and cook for 15 minutes. These beans are excellent with grilled meat or game. Serves 4.
